It is almost Valentine’s Day and even though I am not celebrating it, and actually never did, I think it is a great excuse to make some chocolate!
As most of you know, I do not really eat any processed foods and hence, not really any storebought chocolate. There are few exceptions which are really high quality and awesomly good but I hardly ever spend money on those – because I can get even better chocolate for a lower price and with even better ingredients when I make my own one.
Even though my homemade chocolate is muuuuch healthier than the processed options from the supermarket, I do not make chocolate very often. I made a ton for Christmas and I will certainly make another ton for Eastern, but besides, I do not really crave much chocolate so I rarely think of making some.
However, now that Valentine’s is around the corner, I thought it could be a great idea to share my favorite recipe with you guys – just in case you need a little something to give to a loved on 🙂
Here is what you will need:
200g Cacao Butter
100g Cacao Powder
200g Cashewbutter (I make my own one by just blending up a few hand full of cashews in my high speed blender)
120g Sweetener of choice (I like to use raw yacon syrup, coconut nectar or raw agave syrup)
A dash of vanilla
A dash of salt
Spices of choice (I like to use a blend of cinnamon, ginger, all spice, cardamom, and macis like this one here from Sonnentor)
You can also include a filling of your choice; such as puffed quinoa, a few extra cashews, goji berries, almonds etc. For the chocolate here I used a super yummy goji-cashew blend from Pure Raw
To make the chocolate is super duper easy: heat the cacao butter slowly and carefully (in case you want raw chocolate make sure not to heat to more than 42° C). Add the other ingredients when the cocoa butter is all liquid and pour into moulds of choice. Blend in the filling just before pourring. There are plenty of options for chocolate moulds but you can also just use a casserole (with some baking paper) to make one huge bar that you can cut into small pieces after cooling. This is how I usually do it 🙂
The chocolate should cool down for a couple of hours before eating or cutting. At this time of the year, I like to have it sit on the balcony for a around three hours. In case it is warm where you live, the fridge would probably be the best option.
I would not really call this chocolate healthy, as the cacao butter does contain a lot of saturated fats and there are not like a lot of nutrients in this little treat. However, it is not unhealthy if you do not overconsume it and I think it is a great alternative to all those sugar-loaden options out there. So in case you want to eat healthy but love chocolate, I definetly think that you should give this recipe a try.
Also, in case you have children, this is what you should give them, when they ask for chocolate. Even for birthday parties, for Christmas and for other holidays such as Eastern this will be the perfect alternative for your child. As you can pour the chocolate into really funny and cute moulds your kids will love it for sure!
